Google has quietly added a line to the rich snippets - organizational help document saying they now support "any of its sub-types."
Here is the new line added to the document:
In addition to the schema.org/Organization type, Google supports any of its sub-types, such as schema.org/Attorney.
So this means that Google supports these sub-types under the organization type:
- Corporation
- EducationalOrganization
- GovernmentOrganization
- LocalBusiness
- NGO
- PerformingGroup
- SportsTeam
Then within each, such as the LocalBusiness schema, there are additional sub-types Google supports including but not limited to:
- AnimalShelter
- AutomotiveBusiness
- ChildCare
- DryCleaningOrLaundry
- EmergencyService
- EmploymentAgency
- EntertainmentBusiness
- FinancialService
- FoodEstablishment
- GovernmentOffice
- HealthAndBeautyBusiness
- HomeAndConstructionBusiness
- InternetCafe
- Library
- LodgingBusiness
- MedicalOrganization
- ProfessionalService
- RadioStation
- RealEstateAgent
- RecyclingCenter
- SelfStorage
- ShoppingCenter
- SportsActivityLocation

And then within ProfessionalServices schema they support those sub-types:

Actually this is not new. That's always been the case and it's true for all supported schema.org types. The update you're picking up on is simply clarifying that in our help documentation based on webmaster feedback.
